Organic Vegan Alfredo Purple Pad Thai Recipe

  • Organic Forbidden Rice pad thai noodles 
  • 3-6 mini sweet peppers, sliced (for topping) 
  • Green onion and basil, diced (for topping)
  • Fresh sage, rosemary, and mint (for garnish) 
  • 2 cups raw cashews, soaked 
  • 4 shallots, diced 
  • 6 cloves of garlic 
  • 1/2 a sweet onion, roughly chopped
  • 1/2 lemon, juiced 1 lime, juiced 
  • 1 cup coconut milk 
  • 2 cups almond milk 
  • 1 1/2 tsp black pepper
  • 1/2 tbsp basil 
  • 1/2 tbsp oregano 
  • 1/2 tbsp thyme 
  • 1/2 tbsp rosemary 
  • 2 tbsp nutritional yeast 
  • 2 tbsp tapioca flour (paste mix) 
  • 1/4 cup water (paste mix)


How to cook Vegan Caesar Salad with Pita Croutons

  1. Soak cashews for one hour in boiling hot water OR soak in cold water overnight.
  2. Organic Forbidden Rice Pad Thai Noodles: Follow the package directions for preparation and cooking times separately.
  3. Combine all other ingredients (EXCEPT tapioca flour and water) in a blender and process until satiny smooth.
  4. Put the blended mix into a saucepan and simmer.
  5. While simmering, mix 2 tbsp of tapioca flour and 1/4 cup water in a small dish together into a runny paste.
  6. Add the paste to sauce and mix until warm and thickened.
  7. Combine alfredo sauce with pad thai noodles and enjoy!​
