ingredients:

  • 1 1/2 cups whole wheat flour (or almond flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup of maple syrup
  • 1/4 cup unsweetened apple sauce
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 cups finely grated carrots
  • 1/4 cup of chopped walnuts
  • 1/4 cup of raisins (optional)
  • Ingredients for Vegan Cream Cheese Frosting:
  • 1/4 cup of vegan cream cheese
  • 2 tablespoons of coconut yogurt
  • 1-2 tablespoons of maple syrup
  • 1 teaspoon vanilla extract

How to make Vegan Carrot Cake

  1. Preheat your oven to 350°F (175°C). Lightly grease and line a 9-inch round cake pan with parchment paper.
  2. Prepare dry ingredients: In a medium bowl, mix together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  3. Prepare wet ingredients: In a large bowl, whisk together the maple syrup, applesauce, almond milk, and vanilla extract until smooth.
