How to Make Dairy-Free Cashew Cream Cheese

  1. Most importantly, start with soaking cashews, ideally overnight. If you are in a pinch you can also boil a pot of water, allow to cool slightly, 1-2 minutes, then pour over cashews and soak 15-20 minutes. The end result may not be as smooth, but the flavor will still be exceptional!
  2. Add all ingredients into a food processor and mix until as smooth as possible, remember to stop to scrape the sides as needed.
  3. Transfer the cream cheese into a small air-tight dish, and smooth the surface with a spoon or spatula. Cover, then chill in the at least 1 hour before use. Store in the fridge for up to 2 weeks.
  4. Store remaining cream cheese in the fridge for up to two weeks.
