Easy Vegan Coconut Chia Pudding

With summer on the horizon, we all want to look good and feel our best. Our summer snack options aren’t limited but can get a little boring. Coconut Chia Pudding is here to change that and add a little pizzazz in your life. 


While not only being healthy, it is a delicious breakfast or snack alternative for on the go. It’s made up of a few quick ingredients and best of all, it is meal-prep friendly! Not to mention, it’s a fun way to show off your creative side and brag that you too can chef it up in the kitchen, even if it only requires minimal effort. 

 

How to Make Coconut Chia Pudding 


When choosing which coconut milk to use, you have a few options.

  • For less saturated fats, try coconut milk sold in cartons.
  • For more fortified vitamins and minerals, such as calcium, canned coconut milk is the way to go.
  • For 100% pure ingredients, go with homemade coconut milk.

Homemade coconut milk, if you’re feeling adventurous, is super easy to make and can be made with fresh coconut, water, and a high-powered blender. Since there are no additives it won’t last as long as store-bought milk but it’s still a great alternative to try.


The key to making the amazing coconut chia pudding is to avoid having lumps in your mix. Cultivate the perfect pudding by slowly stirring the chia seeds into the coconut milk. To maximize the benefits it's best to leave refrigerated overnight.


With its strong coconut flavor, you can pair it up well with other fruit like berries or pineapple chunks. A personal favorite is to serve it up parfait style and layer it with fruit and granola to give the texture different consistencies.


Is Coconut Chia Pudding Good For You?


  • While not a direct key to weight loss, there is supporting evidence suggesting that chia seed pudding can help promote weight loss. This being because chia seeds contain 5 grams of fiber per tablespoon and fiber is a known digestive aid in weight loss. 
  • Chia seed pudding is full of omega-3s, packed with fiber, high in protein, and a super healthy and fun alternative. All of which help you stay fuller longer.
  • The thickness of the chia pudding will vary based on the kind of milk you use and how long you let the chia seeds soak.  If it’s too thin you can let the chia seeds sit a little while longer or even add extra chia seeds.
  • While recommended, soaking your chia seeds overnight is not mandatory. When soaked, chia seeds are easier to digest and the nutrients are better absorbed in the body. 

But you can still certainly enjoy this delicious treat on the go with just letting it sit for a few hours refrigerated.

 

How Long Does Coconut Chia Pudding Last?


Chia seed pudding can last anywhere from 2-7 days in the refrigerator. On average healthy chia seed pudding stays fresh in the fridge for up to 5 days. It will not go bad after 5 days, just will not be as fresh. This is not taking into consideration any additional fun toppings you may add to it.

How to make Coconut Chia Pudding

  1. Set out your containers and measure 4 tablespoons of chia seeds and 1/2 cup of coconut milk into each jar or container.
  2. Start with adding 1 teaspoon of agave per serving. Sweeten to taste.
  3. Add a dash of vanilla to each jar for extra creaminess.
  4. Stir vigorously or place lids tightly and give a good shake.
  5. Leave out 30 minutes, then stir or shake it up a little bit more. Place jars in the fridge to solidify and cool.
  6. They are ready in less than an hour. and store best up to 5 days. There are numerous ways to flavor your chia pudding, be creative, and have fun with flavors!
