How to make a vegan eggplant dish

  1. Preheat your grill or grill pan over medium-high heat.
  2. Slice the eggplant into thick, even slices, about ½ inch thick.
  3. In a small bowl, whisk together the balsamic vinegar, soy sauce,olive oil, smoked paprika, garlic powder, dried thyme, salt, andpepper to make the marinade.
  4. Place the eggplant slices in a shallow dish and pour the marinade over them, making sure to coat both sides. Let the eggplant marinate for about 15 minutes.
  5. Once the grill is hot, place the marinated eggplant slices on thegrill. Cook for about 5-6 minutes on each side, or until grill marksform and the eggplant is tender.
  6. Remove the eggplant steaks from the grill and let them rest fora few minutes to cool slightly before serving.
  7. Serve the eggplant steaks as a main course with your favorite vegan sides, such as a quinoa salad or roasted vegetables.
