Zeina’s Gluten-Free Herbed Chickpea Pancake Recipe


These yummy chickpea four pancakes shared by a community member are a delicious and filling recipe to make when in a time crunch and can be paired with a variety of ingredients you already have on hand!


With this recipe, it is easy to feed one person or a large group! When making for one person, make individual pancakes that can be stored for later, and when feeding a large group, make it into a giant pancake and cut into individual slices!


Is Chickpea Flour Healthy?


There are many benefits to incorporating chickpea flour in your diet. Chickpea flour, also known as Besan or garbanzo bean flour, contains fewer calories than regular white flour, and is a vegan-friendly and gluten-free food.


This allows you to consume the same amount of food with fewer calories. Chickpea flour has a lot of fiber; it has about triple the amount in white flour. This fiber has proven to even improve blood fat levels!


Compared to white and whole wheat flour, chickpea flour has more protein. This is vital for muscle growth and staying full for a long time. Chickpea flour is a wonderful addition to vegan and vegetarian diets as it contains 8 out of the 9 important amino acids, making it a very beneficial ingredient. 


Does Chickpea Flour make you gain weight?


The short answer is, no. Since chickpea flour keeps you full for a longer period of time from the high fiber, your body needs to do more work to digest it, thus burning more calories. Chickpea flour fills you up fast, so the calorie intake is low to begin with. 


How do you eat Socca?


Socca can be made into small, individual pancakes, like in this recipe. However, they can fill the entire pan and be made into a big pancake. This can be cut into wedges and served. Socca can easily be refrigerated and heated up lightly when ready to eat. 


What do you serve with Socca?


This socca recipe is extremely versatile in what it can be paired with. It can be eaten with a light salad on the side. You could make it into a pizza crust and add on your favorite toppings. Roasting vegetables (tomatoes and greens) would make a great addition. To keep it simple, it can also be dipped into hummus or olive oil!

How to cook Herbed Chickpea Pancakes

  1. Add the water and avocado oil, whisking until smooth (no clumps).
  2. In a bowl, mix the chickpea flour, thyme, oregano, and salt.
  3. In a skillet over medium heat, warm up about a teaspoon of avocado or coconut oil. Pour a quarter of the chickpea mixture until a 6-inch pancake forms. Once cooked through (about 3-4 minutes), flip the pancake and cook the other side. Repeat for the rest of the chickpea batter.
  4. Once the pancakes are plated, top with the lemon juice and garnish with the red pepper flakes. Enjoy!
