Gluten-free Cauliflower Pizza

ingredients:

  • 1 head of cauliflower, broken into florets
  • 2 tbsp ground flaxseed
  • 4 tbsp water
  • Himalayan pink salt, to taste
  • 8 tbsp pea pesto
  • 4 sun-dried tomatoes, chopped
  • 1 zucchini, peeled into ribbons
  • 1 red onion, finely sliced
  • 1 handful of black olives
  • 3 1/2 oz vegan cheese (grated mozzarella style)
  • Handful of rocket/arugula to serve
  • Drizzle of olive oil

instructions:

How to cook Vegan Cauliflower Pizza

  1. Preheat the oven to 350° F. To make the pizza base, place the cauliflower into a food processor and blend until it has formed an even couscous like texture.
  2. Bring a large pan of water to the boil and blanch the cauliflower for a few seconds then strain using a fine mesh strainer and rinse briefly under cold water.
  3. Place into a clean tea towel and squeeze out as much moisture as possible.
  4. Whisk the flaxseed with the water in a small bowl then add the cauliflower and mix together to form a crumbly dough.
  5. Bring the dough into a ball with your hands and roll out between two pieces of baking parchment to create 1 medium pizza.
  6. Transfer these to a baking sheet and bake for 45 minutes until crispy and golden.
  7. Top the pizza with the pesto then scatter over the other ingredients, finishing with the cheese.
  8. Return to the oven for 8-10 minutes until the cheese has melted and the zucchini is starting to wilt.
  9. Scatter over the arugula and drizzle over a little olive oil to serve.
