Vegan Mac and Cheese

  • 2 1/2 cups of pasta
  • 1/4 cup coconut milk
  • 1 cup cashews
  • 1 yellow potato
  • 1 red onion
  • 1 carrot
  • 1 tsp garlic powder
  • 2 tsp nutritional yeast
  • Lemon


How to Make Vegan Mac and Cheese

  1. Wash and peel the potato and carrot. Cut the onion to about the size of the potato. Roughly chop the vegetables.
  2. Prepare two pots of boiling water. Pour the vegetables into one pot and the pasta into the other.
  3. Boil vegetables for 10 minutes and pasta for 8 minutes.
  4. Drain the pasta and vegetables when they are done cooking. Set aside about 1 cup of water from the boiled vegetables.
  5. Put vegetables in a blender. Then add the cashews, garlic powder, nutritional yeast, coconut milk, and squeeze one lemon wedge into the blender. Lastly, add 3/4 cup of the vegetable water and blend until smooth.
  6. Add your blended mixture to the pasta and mix together.
  7. Optional: Garnish with cayenne or red pepper flakes.

Preacher Lawson is a stand-up comedian, actor, singer, human, professional black guy. I was born in Portland, Oregon, but raised most of my adolescence in Memphis, TN. I moved 20 times before age 10, but if you asked me what city I'm from I'd say Orlando, FL. Because that's where I grew as a comedian.

Growing up switching schools all of the time you had to learn how to adapt. Everywhere I'd go I would learn about different people and different cultures, but I noticed the one universal language everyone had in common was laughter. Which is how I spoke and warmed up to most people. Even when I wasn't the funniest I was still the loudest.

I started writing jokes when I was 16 for about a year, then decided to perform for the first time at age 17 as between my mother and I. Best decision of my life.
