Enjoy this completely vegan meatless meatball and pasta recipe. Garnish it with whatever you prefer. It has oats to provide that fiber that we all need as well as kidney beans which are very nutrient rich.

ingredients:

  • Pasta
  • 1 cup oats
  • 1 can kidney beans
  • 1 bottle tomato sauce
  • 1/2 a red onion
  • 1 tbsp chili powder
  • 1 tbsp black pepper
  • 1 tbsp salt
  • Garlic (to taste)

How To Make Meatless Meatballs

  1. Preheat oven to 350° and prepare a cooking sheet with your choice of a non-stick ingredient.
  2. In a blender, add oats and blend until they look like flour.
  3. Drain the kidney beans and then add them to the blender. Blend with the oat flour.
  4. Proceed to add the garlic cloves and onion to the blender. Blend the mixture together.
  5. Scrape the mixture out of the blender and into a large bowl. Add chili powder, black pepper, and salt. Mix ingredients together.
  6. Spray your hands with a non-stick ingredient. Begin forming the meatballs and placing them on the pan. Space them out so that they do not touch each other.
  7. Cook for 10 minutes in the oven and then turn them over and cook for another 10 minutes.
  8. While the meatballs cook, prepare the pasta in a large pot on the stove. Drain pasta when it is done.
  9. Add the pasta, meatballs, and tomato sauce into the large pot and stir together. Let it simmer for about 10 minutes.
  10. Once everything is done simmering, pour the meal into a bowl. Feel free to add in whatever ingredients you prefer in your pasta.
