Homemade Vegan Burrito

ingredients:

  • 3 cups cooked basmati rice
  • 1/4 cup water
  • 1 tbsp olive oil
  • 1 tbsp coconut oil
  • 1 can black beans 15 oz (drained)
  • 1 can sweet corn 15 oz (drained)
  • 3 cups shredded lettuce
  • 4 large tomatoes (chopped)
  • 2 avocados
  • 1/2 medium white onion (chopped)
  • 1/2 cup cilantro (chopped)
  • 12 sundried tomatoes (chopped)
  • 1/2 tsp crushed garlic
  • 1 tbsp lime juice (freshly squeezed)
  • 1/4 tsp dried chili flakes
  • 1/4 tsp cayenne pepper
  • Cumin, to taste
  • Salt and pepper (to taste)
  • 8 large soft flour tortillas (optional: use gluten-free tortillas)

How To Make A Homemade Vegan Burrito

  1. Put rice in a pot with 2 cups of water and bring to a boil. Lower to simmer.
  2. Chop up half of your onion and place in a large pan with olive oil.
  3. Add crushed red pepper, black pepper, cumin, and cayenne pepper to the large pan. Then add the drained sweet corn and drained black beans.
  4. Stir your mixture for a few minutes and then add water.
  5. Add sundried tomatoes to your rice when it is finished cooking.
  6. Chop the other half of the onion, cilantro, and tomatoes. Put it all in a large bowl and squeeze lime over it. Add salt and pepper, then stir everything together.
  7. In another bowl, scoop out the insides of your avocados. Then squeeze another lime over it. Add salt and pepper to taste. Mash everything together until you have guacamole.
  8. Chop up the head of lettuce.
  9. Put your tortilla on a plate and add a little bit of everything to it. Add your black beans and corn mixture, rice, pico de gallo, guacamole, and lettuce. Roll up your burrito and you are all set!
