ingredients:

  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 6 cups of vegetable broth
  • 1 tablespoon of extra virgin olive oil
  • chicken-free alternatives
  • 1 cup of noodles or rice (optional)
  • 1 teaspoon of thyme
  • salt and pepper to taste
  • fresh parsley for garnish
  • lemon juice for garnish

instructions:

How to cook Green Glowing Goddess Soup

  1. Start by sautéing the onions, carrots, and celery in a large pot with a splash of extra olive oil until soft and translucent.
  2. Add in garlic and sauté for another few minutes until it is fragrant.
  3. Add the vegan chicken substitute to the pot and stir it around to allow it to brown.
  4. Pour the vegetable broth into the pot, add the thyme, and bring everything to a boil.
  5. After boiling for 10 minutes, add the noodles or rice, reduce the heat to a simmer, and let it cook for 15 minutes.
