How to Make A Matcha Lime Cheesecake


The simplicity of this recipe may surprise you! 


  • The recipe is in two parts - the crust and the filling 
  • Both parts just require blending together of all the ingredients in the food processor - no added mess or extra dirty bowls 
  • Ensure that you freeze them for the recommended time- this helps the cheesecake hold together properly

We topped ours with flowers for a beautiful arrangement and an even more vibrant pop of color. However, feel free to top off the cheesecake with anything you would like!

How to make Matcha Lime Cheesecake

  1. Line the base of the springform tin with parchment paper. In the food processor add 1 tbsp maple syrup, ground almonds, and cashew butter then very briefly pulse together.
  2. While the food processor is running pour in the melted 1/2 cup coconut oil until the dough comes together.
  3. Press the mixture into the base of the pan to form an even layer and place in the freezer for 20 minutes.
  4. While the crust is in the freezer, begin making the cheesecake filling. Add remaining 3 tbsp maple, 1/2 cup coconut oil, and all remaining filling ingredients into a food processor and blend for 1-2 minutes until the mixture comes together and is smooth and creamy.
  5. Pour over the crust, smooth over, and set in the freezer for 20 minutes. Transfer to the fridge until ready to serve!
