  • Tigernut Flour - contains calcium, magnesium, potassium, sodium, phosphorus and zinc and vitamins E, C and folic acid.
  • Blueberries - anti-inflammatory and high in antioxidants, potassium and vitamin C which can help lower your risk of heart disease and cancer  
  • Oats - contain vitamins, minerals, fiber and antioxidants which can help lower blood sugar levels and reduce the risk of heart disease

How to make Oatmeal Blueberry Superfood Power Breakfast Bars

  1. Preheat oven to 375 °F and coat an 8x8 pan with cooking spray.
  2. In a large bowl, add oats, flour, sugar, cinnamon, hemp hearts, baking powder, salt, and vanilla together and mix well.
  3. Add the chilled vegan butter and cut quickly into the dry ingredients using two knives until the mixture is no longer powdery and starting to chunk together. Do not overmix!
  4. Split mixture roughly in half and press the first half into greased pan. Bake until lightly browning at edges but not fully cooked, just about 12-15 minutes.
  5. While granola is baking, mix together blueberry preserves with spinach puree in a small bowl.
  6. Remove granola from the oven and spread the blueberry mixture over evenly. Sprinkle with remaining oat mixture and return to the oven uncovered for another 20-25 minutes until the top is nicely toasted.
  7. Set the pan on a rack to cool completely before cutting. Makes 12 delicious and healthy bars!
