How to cook Lemon Glazed Banana Bread

  1. Preheat oven to 350° F and oil a small loaf pan using vegan shortening or grapeseed oil.
  2. Mash bananas in a large bowl, then add the maple syrup, oil, and vanilla until combined.
  3. Add the dry ingredients and mix well.
  4. Stir in the nuts and fill the loaf pan. Bake for 30 minutes or until bread is golden on top (insert a toothpick into the center of the cake and check if it comes out clean).
  5. Allow the bread to cool slightly in the pan and then flip it onto a wire rack to cool completely.
  6. Once cooled, mix the fresh lemon juice with powdered sugar to make a paste, then drizzle glaze over loaf.
