Fresh Lemon Glazed Vegan Banana Bread

A delicious 7 ingredient recipe for an amazingly treat that can be a snack, dessert, or even a breakfast indulgence on a lazy Sunday. The lemon zest paired with the sweetness of the banana bread is a match made in palate heaven! Assuaged Tip: Add 1 tsp black sesame seeds and 3 diced strawberries for more nutritional value.

  • 1 1/2 cup sprouted spelt flour
  • 1 1/2 tsp baking soda
  • 3 tbsp grapeseed oil
  • 1/2 cup pure maple syrup
  • 3 ripe bananas
  • 3/4 cup of desired nuts
  • 1 tsp vanilla (optional)
  • 1/4 tsp pink himalayan salt
  • 1/2 fresh lemon, juiced (for glaze)
  • 1/2 cup powdered sugar (for glaze)


How to cook Lemon Glazed Banana Bread

  1. Preheat oven to 350° F and oil a small loaf pan using vegan shortening or grapeseed oil.
  2. Mash bananas in a large bowl, then add the maple syrup, oil, and vanilla and until combined.
  3. Add the dry ingredients and mix well.
  4. Stir in the nuts and fill the loaf pan. Bake for 30 minutes or until bread is golden on top (insert a toothpick into the center of the cake and check if it comes out clean).
  5. Allow the bread to cool slightly in the pan and then flip it onto wire racks to cool completely.
  6. Once cooled, mix the fresh lemon juice with powdered sugar to make a paste, then drizzle glaze over loaf.
