  • 1 pound of purple potatoes
  • 1 tsp of sage, rosemary, thyme, oregano (add fresh herbs for extra holiday spice)

instructions:

How to Make Purple Power Mashed Potatoes with Gravy

  1. Wash and peel potatoes in a bowl of water with 1 tsp of baking soda and apple cider vinegar to clean from potential pesticides.
  2. Set sliced potatoes in a pot of boiling water to cook for 20-25 mins.
  3. Drain potatoes with a strainer and allow to sit for a few minutes to dry.
  4. Add some almond cashew milk and desired spices in a large bowl and use an immersion blender, or potato masher, or a handheld mixer, or a vitamix blender for desired mashed potato consistency.
  5. Add pink salt, black pepper, chives, and roasted garlic for more intense flavor.
