How to cook Maple Glazed Vegan Ham

  1. Start with making the glaze. Mix together 4 tbsp maple syrup, 4 tbsp soy sauce, 2 tbsp tomato paste, 6 drops liquid smoke,1 tsp smoked paprika, and 1/4 cup apricot jam. The flavor may be strong, so adjust to taste and set aside.
  2. Preheat oven to 350° F.
  3. In a large bowl, stir together the dry ingredients (the first 7 ingredients). In another bowl, stir together all the wet ingredients until combined.
  4. Pour the wet into the dry ingredients and stir until a dough forms. Use either a stand mixer with a dough hook or knead it by hand. If using a stand mixer, allow it to knead with the dough hook for 6 minutes on medium speed. If by hand, knead for 10 minutes until the dough is super dense and almost rubbery.
  5. Roll the dough into a ball and placed it on a square of plastic wrap. Enclose the ham and pull the plastic tight until it forms a smooth roast shape. Remove plastic and brush it with 1 tbsp of the marinade and wrap it tightly in aluminum foil. (The dough will try to expand during baking, so wrap it tight to constrict expansion for a denser final texture.)
  6. Bake for 50 minutes at 350°, turning every 15 minutes to ensure even baking. Remove from oven and allow to cool completely. (You can store the ham in the refrigerator for up to 5 days at this stage, before glazing.)
  7. Once completely cool, score the vegan ham with a diamond pattern using a sharp knife and insert a clove into the center of each diamond. Place the roast on a baking pan and surround with sliced pineapples and oranges if preferred. Brush with glaze.
  8. Bake 15 minutes at 375° F, brushing with glaze as often as possible until fully heated. For a browned exterior, place under the broiler on high for 4-5 minutes. Extra glaze can be served with ham slices.
