ingredients:

  • 1 cup black beans
  • 1 cup garbanzo beans
  • 1 cup BBQ sauce
  • 2 tbsp ground dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 tbsp coconut oil
  • 1 medium onion, diced
  • 1 bunch of collard greens
  • 1/2 cup carrots, shredded
  • 2 garlic cloves, chopped
  • 1/2 tsp chipotle chili powder
  • 1/2 tsp crushed red pepper
  • 1 tsp pink himalayan salt

instructions:

Sweet and Spicy Cuban-Style Collard Greens and Beans

  1. In a large pot heat oil over medium heat. Then add onion, garlic, salt, and sauté for five minutes.
  2. Add remaining ingredients and stir well. Cover and simmer for 15 minutes until greens are tender.
