  • 3 medium sweet potatoes
  • 2 tbsp unrefined coconut oil
  • 1 medium onion, diced
  • 1 jalapeño, diced
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tsp himalayan pink salt

instructions:

How to cook Vegan Caesar Salad with Pita Croutons

  1. In a large pan, melt coconut oil over medium heat.
  2. Add onions and jalapeño with half of the salt and cook until softened and lightly browned.
  3. Add remaining ingredients and stir frequently for 20 minutes until potatoes are browned (add water or veggie stock for extra moisture and non-stick).
  4. Top with fresh herbs if desired.
