ingredients:

  • 1 cup chickpeas
  • 1 cup coconut milk
  • 2 tsp unrefined coconut oil
  • 1 large bunch of kale
  • 1/2 cup sun-dried tomatoes
  • 1 small onion, diced
  • 3-4 garlic cloves
  • 1 tbsp ginger, grated
  • 1 large lemon, juice & zest
  • 1 tsp ginger, ground
  • 1/2 tsp crushed red pepper
  • 1 tsp pink himalayan salt

instructions:

Indian-Spiced Sautéed Lemon Coconut Kale with Chickpeas

  1. Heat oil in a pan over medium heat, then add onions and cook for 5 minutes.
  2. Add garlic, ginger, tomatoes, lemon zest, and crushed red pepper. Stir frequently and cook for 3 minutes.
  3. Add chickpeas and cook for another 3 minutes. Toss in kale and stir until cooked down.
  4. Add coconut milk, lemon juice, salt, and ground ginger, toss together.
  5. Top with toasted unsweetened coconut flakes and cilantro if desired.
