ingredients:

  • 1 pound of fresh udon noodles or any dried spaghetti or soba type noodle
  • 3 tbsp natural peanut butter
  • 2 tbsp tahini
  • 4 tbsp toasted sesame oil
  • 8 tbsp soy sauce
  • 4 tbsp mirin
  • 3 tbsp rice wine vinegar
  • 2 tbsp maple syrup
  • 2 garlic cloves, peeled
  • 2 tbsp ginger, minced
  • juice of 1 lime
  • 1 tsp crushed red pepper flakes
  • 1/2 cup roasted peanuts, chopped (garnish)
  • 1/4 cup cilantro, chopped (garnish)
  • 1/4 cup scallions, chopped (garnish)

instructions:

How to make Cold Peanut-Sesame Noodles

  1. Bring to a boil a large pot of water. Cook noodles until tender and past the point of al dente. Drain and shock in an ice-water bath (to prevent stickiness).
  2. When cool, rinse and drain. Toss with a little sesame oil.
  3. Put all ingredients for the sauce into a blender and blend until completely smooth.
  4. Toss the noodles with sauce.
  5. Garnish with the chopped peanuts, cilantro, and scallions.
