What Are Shiitake Mushrooms?


Shiitake mushrooms are some of the most nutritious, with 58 milligrams of potassium in a single mushroom! Shiitake mushrooms are complex carbohydrates filled with good-for-you nutrients like vitamin B, copper, magnesium, iron, manganese, phosphorus, selenium, and zinc. Shiitake mushrooms also contain all eight essential amino acids, which are a nutrient we must get from our food as our bodies cannot make them themselves. Shiitake mushrooms make a great vegetarian/vegan substitute for meat, as it has a great savory taste and a mouthfeel almost exactly like meat! Regarding medicinal properties, many centuries ago, and even today, the Chinese used shiitake mushrooms to help treat the common cold, headaches, or even constipation, and it is believed to help with longevity. Extracts taken from this mushroom might give you an immune boost, cause viruses to die off, or improve the microflora population in your gut biome.




Can Another Type of Mushroom Be Used For Making Vegan Bacon?


If you want to get as close to a meaty flavor and consistency as possible, either shiitake or pink oyster mushrooms should be used for the vegan bacon recipe. Even without any seasonings or marinades, a shiitake mushroom already has a bacon-like flavor, which a mushroom like a portobello will not give you. Portobello mushrooms must be put into a marinade with many seasonings to taste anything like bacon.



What Does Vodka Sauce Taste Like?


Vodka sauce is an excellent choice for pasta if you want a creamy and rich recipe. Combining the tomato with dairy or nondairy alternatives creates a great combination of acidity and creaminess. While the tomatoes cook and reduce in the saucepan, they start to caramelize and get a jam-like consistency, which combines well with the strong flavor of the vodka. Even though vodka does give a nice kick when drunk by itself, in this recipe, it is in the background of the flavor profile. You will also find a nice bright flavor with herby pepperiness.







What Is The Difference Between Vodka Sauce And Marinara Sauce?


A few components make a vodka sauce different from a marinara sauce. Marinara sauces are often made with fresh tomatoes, garlic, basil, onion, and salt and pepper. Vodka sauce, while made with fresh tomatoes, basil, and garlic, incorporates a dairy component like cream or half-and-half (or nondairy alternative) and vodka. Adding dairy/nondairy alternatives helps to give the vodka sauce a nice creamy and smooth feel, while the marinara sauce is not creamy.



Is Gigi Hadid Pasta Just Made With Vodka Sauce?


While browsing the Internet or social media, you may have seen Gigi Hadid’s breakout pasta recipe. While it is typically called “Gigi Hadid Pasta,” it is a version of a spicy vodka sauce. It consists of your basic tomato vodka sauce with a decent amount of red pepper flakes added to it. Parmesan cheese is also added to her recipe. However, while Gigi called it a spicy vodka sauce in her video, vodka was not added to her recipe specifically as she was pregnant then.

Miso Vodka Sauce with Shiitake Bacon

  • 1/4 cup olive oil
  • 5 garlic cloves, peeled
  • 1/2 large or 1 small yellow onion, diced
  • 2 - 28 oz. cans whole peeled tomatoes
  • 1/2 cup vodka
  • 2 tsp kosher salt
  • 20 basil leaves
  • 3/4 cup raw cashews, soaked for 1 hour and drained
  • 3/4 cup water
  • 3 tbsp. red miso paste
  • 3 tbsp. nutritional yeast
  • 8-10 shiitake mushrooms (cleaned and stems removed), sliced thin
  • 2 tbsp. olive oil
  • 1/2 tsp smoked paprika
  • 1 tsp soy sauce


How to Cook Miso Vodka Sauce with Shiitake Bacon

  1. Smash the garlic cloves a bit with the side of your knife or the bottom of a frying pan.
  2. In a medium-sized soup pot, heat the olive oil over medium-low heat. Add the onion and garlic and cook for 3-5 minutes, being careful not to burn the garlic or onions.
  3. With your hands, break up and crush the tomatoes as you add them to the pot. Add the tomato juice left in the cans, scraping the sides with a rubber spatula.
  4. Bring to a simmer and then reduce to low heat. Cook for 50 minutes, stirring every so often.
  5. Add the vodka and cook for an additional 10 minutes to cook off the alcohol.
  6. Turn off the heat, add the salt, and tear up (or chiffonade) the basil leaves into the sauce.
  7. Drain the cashews and put into a blender.
  8. Add the water, miso paste, nutritional yeast, and 1-2 cups of the tomato basil sauce.
  9. Blend on high for 2-3 minutes or until completely smooth. Add cashew cream back to the tomato basil sauce pot and stir.
  10. Heat olive oil over medium heat in a large skillet. Add the sliced mushrooms and stir.
  11. Cook for 3-6 minutes or until crispy like bacon, being careful not to burn the mushrooms.
  12. When the mushrooms are done, add the smoked paprika and soy sauce. Cook until the soy sauce has evaporated. Turn off the heat and place mushrooms on a paper towel to soak up any excess oil.
  13. Cook your favorite pasta according to the package (there is enough sauce for at least 2 lbs of pasta).
  14. Drain and toss with the miso vodka sauce.
  15. Plate the pasta and top each serving with a few shiitake bacon slices. Serve immediately.
