Maca is deemed a superfood because it's very nutritious with multiple vitamins and minerals. It is low-fat, yet contains significant amounts of vitamin B6, copper, potassium, and iron.

Other qualities of maca are:

1) It has been proven to increase libido in both men and women. In some instances, it can improve fertility in men as well.

2) It can boost energy and endurance.

3) Menopausal women see improvement in mood swings, vaginal dryness, hot flashes, bone density, and increased sleep quality.

Vegan French Toast with Maca Topping 

The type of bread you use in this recipe is the key to its success. A loaf of bread with a thicker crust, such as ciabatta, sourdough, or French bread will work best. 

Another key ingredient is cornstarch in place of eggs. Cornstarch will ensure the coating of the bread is crisp and delicious! 

Finally, any derivative of a non-dairy beverage will work fine. This recipe uses hemp milk, but oat, soy, almond, or cashew milk may be used as well.

Vegan French Toast with Maca Topping

Yield: 4 servings

  • French Toast Ingredients:
  • 1 1/2 cups hemp milk
  • 1/3 cup cornstarch
  • 1 1/4 teaspoon ground flaxseed
  • 3/4 teaspoon baking powder
  • 1 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 1/2 teaspoons pure maple syrup
  • 1 1/4 teaspoons pure vanilla extract
  • 8-10 slices thick-sliced bread (ciabatta, French or sourdough)
  • 2-3 tablespoons cooking spray or coconut oil for frying
  • Topping Ingredients:
  • 1 tablespoon maca powder
  • 1 tablespoon nutmeg
  • 1 tablespoon cinnamon
  • Optional toppings:
  • Maple syrup
  • Fruit
  • Powered sugar


Vegan French Top with Maca Topping

  1. Make the topping by mixing together the maca powder, nutmeg, and cinnamon in a small bowl. Set aside.
  2. Using a shallow pan or bowl, whisk together the hemp milk, cornstarch, ground flaxseed, baking powder, cinnamon, nutmeg, maple syrup, and vanilla.
  3. Warm a skillet to medium-high heat and add coconut oil or spray with cooking spray.
  4. Whisk batter one more time and dip each side of the bread in it, letting it soak for about 10 seconds.
  5. Add the bread to the pan and cook for 2-3 minutes per side until golden brown.
  6. Add more coconut oil or cooking spray to the pan as necessary between slices.
  7. Sprinkle the mixed toppings over the French toast.
  8. Add optional toppings if desired.
