Vegan Jackfruit BBQ Ribs

How to cook Vegan Jackfruit BBQ Ribs

  1. Start by soaking bamboo or popsicle sticks in warm water for about 20 minutes.
  2. Drain and rinse jackfruit well. Then steam, or boil with bay leaves and a pinch of salt, for 10-15 minutes, until very tender. Shred with a fork and discard any tough pieces. Set aside to cool slightly.
  3. In a large bowl combine all the dry ingredients together then add the cooled jackfruit, coconut aminos, vegetable stock, and a pinch of Himalayan pink salt. Mix together until a dough forms and then knead it for bout 5 minutes until it begins to holds together well. Add a little extra wheat gluten if the dough seems too moist or a little splash of water if it is too dry.
  4. Preheat oven to 375 °F and grill to medium heat, and prep large baking dish with parchment paper.
  5. Mold your Jackfruit Ribs in a loaf pan about one inch thick then slice in half to manage more easily.
  6. Push the soaked popsicle sticks through the dough spacing about one inch apart.
  7. Place ribs on the grill once heated and cook for about 3 minutes on each side, until defined charred grill marks are visible.
  8. Spread a thin layer of BBQ sauce on top of ribs, then flip over and place in lined baking dish for easier clean up later.
  9. Spread another thin layer of sauce on top and cover before placing in the preheated oven for 30 minutes.
  10. Brush surface with more BBQ sauce, then carefully flip the ribs using a pair of kitchen tongues. Be a little more generous with sauce on the final layer and cook uncovered for 20 minutes longer.
  11. Remove from oven and allow to cool slightly before cutting into your Vegan Jackfruit BBQ Ribs with a serrated knife. You may forget it isn't meat!
