Vegan Gingerbread Cookie Recipe

Vegan Gingerbread Cookie Recipe

ingredients:

  • 1 1/3 cup almond flour (fine)
  • 3/4 cup all-purpose flour (or tapioca startch)
  • 1 1/2 Tbl sugar of choice (I used coconut sugar)
  • 1 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1 Tbl ground chia seeds (or flax)
  • 1/4 tsp salt
  • 3 Tbl melted coconut oil
  • 1 Tbl maple syrup
  • 3 Tbl molasses
  • 3 Tbl water

instructions:

How to make vegan gingerbread cookies.

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine all dry ingredients into a medium mixing bowl and mix well.
  3. Combine all wet ingredients into a small bowl and mix well.
  4. Pour wet ingredients into dry ingredients and mix with a rubber spatula or wooden spoon until dough forms.
  5. Layout some parchment paper onto the counter, and roll or pat out the dough until about 1/4 inch thick.
  6. Using your favorite cookie cutters, cut shapes in dough and place them onto a 9"x13" parchment-lined cooking sheet.
  7. Bake cut out cookies for 12-15 minutes.
  8. Let cool 1 hour before icing.
