Vegan Fish Sauce

Yield: 1 cup

ingredients:

  • 1 1/3 cups water
  • 1/2 cup diced shiitake mushrooms
  • 1 tsp black salt (optional)
  • 1-2 cloves garlic (optional)
  • 2 tbsp. soy sauce
  • 1 tsp sugar or rock sugar
  • 1 1/2 tsp sea salt or garlic salt

instructions:

How To Make Vegan Fish Sauce

  1. Dice a small handful of rinsed shiitake mushrooms.
  2. Peel two cloves of garlic. Measure out remaining ingredients and set them aside.
  3. Bring water to a boil. Add all of the ingredients to the pot and stir for 1 minute.
  4. After 5 minutes, reduce heat to low. Let simmer for 30 minutes with the lid on.
  5. Let cool for 5 minutes, then transfer to a small jar or Tupperware.
