ingredients:

  • 2 cups vegetable stock
  • 1 jack fruit
  • 1/2 a red onion
  • BBQ sauce (to taste)
  • 1 tsp cumin
  • 1 tsp salt

How To Make Vegan Pulled Pork

  1. Slice jackfruit down the middle. Remove seeds from the sides of the jackfruit. Cut around the fruit, about a half-inch from the rind.
  2. Remove seeds from inside the jackfruit and thinly slice the remaining fruit.
  3. Preheat oven to 350° and prep baking sheet.
  4. Add onions, jackfruit, salt, cumin, and vegetable stock into large a pot and simmer.
  5. Once the vegetable stock has been absorbed, spread the mixture onto a baking sheet evenly and cook for 30 minutes in the oven.
  6. After 30 minutes, add the BBQ sauce to the vegan pulled pork. Mix it together and cook for another 10 - 15 minutes.
  7. Let cool and enjoy!

Growing up switching schools all of the time you had to learn how to adapt.
