  • 6 corn tortillas
  • 2 tbsp olive oil
  • 1 can black beans
  • 2 potatoes
  • 2 carrots
  • Pico de gallo
  • Jalapeños
  • 1/2 a lemon
  • 2 tbsp nutritional yeast
  • 2 tbsp garlic salt
  • 1 tbsp chili powder


How To Make Vegan Nachos

  1. Preheat oven to 350° degrees and bring a pot of water to boil.
  2. Skin and slice potatoes. Slice carrots into smaller pieces as well. Add to pot of boiling water and cover with a lid.
  3. In a smaller pot, begin warming the black beans over medium-low heat.
  4. Cut your tortillas into smaller chip-sized pieces and place them on a baking sheet. Season with salt and place on the bottom rack to cook for 12 minutes.
  5. Check the large pot with the potatoes and carrots. When vegetables are soft, drain and add them into a blender.
  6. After placing the vegetables into blender; add nutritional yeast, olive oil, garlic salt, chili powder, and squeeze the half lemon in there. Then blend until smooth.
  7. Remove the chips from the oven and drain the black beans once they are done cooking.
  8. Prepare the chips on a plate. Add the cheese mixture, black beans, and the jalapeños. Repeat the cycle until you have the perfect tower of nachos. Top with the pico de gallo and enjoy!

Preacher Lawson is a stand-up comedian, actor, singer, human, professional black guy. I was born in Portland, Oregon, but raised most of my adolescence in Memphis, TN. I moved 20 times before age 10, but if you asked me what city I'm from I'd say Orlando, FL. Because that's where I grew as a comedian.

Growing up switching schools all of the time you had to learn how to adapt. Everywhere I'd go I would learn about different people and different cultures, but I noticed the one universal language everyone had in common was laughter. Which is how I spoke and warmed up to most people. Even when I wasn't the funniest I was still the loudest.

I started writing jokes when I was 16 for about a year, then decided to perform for the first time at age 17 as between my mother and I. Best decision of my life.
