Vegan Mushroom Tikka Masala

ingredients:

  • 1/4 cup of non-dairy milk
  • Non-dairy butter
  • 1/2 handful of cashews
  • 10 oz of mushrooms
  • 4 green chilis
  • 2 tomatoes
  • 1 red onion
  • 1 inch of ginger
  • 6 garlic cloves
  • 1 tsp masala
  • 1 tsp chili powder
  • 1 tsp turmeric
  • Avocado oil

instructions:

How To Make Vegan Mushroom Tikka Masala

  1. Cut the red onion in half. Remove the first layer of the onion and proceed to dice the onion. When finished, place it in a large bowl.
  2. Dice the 6 garlic cloves and put them in the bowl with the red onions.
  3. Use a cheese grater to shred the ginger. Add to the bowl.
  4. Cut the tops off of the green chilis and then proceed to cut each of them into 4 slices. Add to the bowl with the other vegetables.
  5. Add avocado oil and non-dairy butter to a large pan and heat on medium-high.
  6. Proceed to add all your cut up vegetables to the large pan. Turn the heat down to medium and stir the vegetables.
  7. Chop up the mushrooms and put them in the large pan. Add some salt and stir everything together.
  8. Add the tomatoes and cashews to a blender and blend them together.
  9. In a small bowl, combine the turmeric, masala, and chili powder.
  10. Add the tomato and cashew mixture as well as the spices to the large pan. Add your non-dairy milk and stir.
  11. (Optional) cook rice as a base for your vegan mushroom tikka masala.
