Is Mochi Healthy?

Believe it or not, this sweet delicious treat contains a number of beneficial ingredients. Sweet rice flour is made from short-grain glutinous rice. Rice flour contains iron, calcium, protein, carbohydrates, fiber, and vitamin C. It is also gluten-free which can be used as a substitute for wheat flour. 

 

Mochi is not exactly a healthy food but it's great for a small taste of indulgence and is healthier than most desserts!

How to Make Matcha Mochi Strawberry Popsicles?

 

This is a quick and easy vegan popsicle recipe that requires two parts - the mochi and the popsicles.

 

Start by setting aside the coconut flour for later! Mix the rest of the ingredients for the mochi in a small microwave-safe bowl. Place it in the microwave for a couple of seconds and roll into balls with the coconut flour and then set aside.

 

Blend all the ingredients for the popsicle together until you see a thick consistency and pour into popsicle molds. Drop in the mochi balls and make sure to freeze the popsicles until solid.

ingredients:

  • 1 tbsp sweet rice flour
  • 1 tbsp water
  • ½ tsp matcha powder
  • Few drops of liquid stevia (or sweetener of your choice)
  • 1 tsp coconut flour
  • 1/2 cup of strawberries
  • 3 tbsp coconut milk
  • 3-4 tbsp almond milk
  • Sweetener of choice to your preference

How to Make Matcha Mochi Strawberry Popsicles

  1. Add the sweet rice flour to a small microwavable dish and slowly mix in the water, once incorporated mix in the matcha and a couple of drops of stevia.
  2. Microwave for 45 seconds or until it is slightly firm.
  3. Spread the coconut flour on a small plate and once the mochi is cool enough to touch, take small pieces of it and roll them into balls.
  4. Roll each ball in the coconut flour to coat and then set aside.
  5. Blend all ingredients for the popsicles together - almond milk, strawberries, coconut milk, and sweetener. The mixture should be on the thicker side, but pourable - if it's not, add more almond milk.
  6. To make the popsicles - pour a little bit of the mixture in the popsicle mold, drop in a couple of mochi bits, and repeat until you fill the mold completely then place popsicle sticks in the center.
  7. Repeat with the rest of the mixture and mochi.
  8. Freeze until solid.
  9. To remove popsicles from the molds - run them under warm water and wiggle the sticks until you can pop them out. Enjoy!
