Replacing regular flour with oat flour is simple, but make sure to do it by weight and not volume as oat flour is much less dense than wheat flours. 

 

The key to fabulous pancakes is ensure all ingredients are blended into one smooth and consistent batter. Cook at a medium-low temperature with a lid to cook thoroughly while ensuring a golden brown surface.

How to cook Vegan Caesar Salad with Pita Croutons

  1. Measure 1 cup of oats and pour into a blender. Blend on a low setting for about 1 minute, or until a fine flour forms.
  2. Wipe the edges of the blender with a spatula and add the spices (cinnamon, nutmeg, and a pinch of salt). Pulse for 30 seconds to mix together.
  3. Add the rest of the ingredients and blend until combined.
  4. To cook, grease a pan with oil of choice, I prefer unrefined coconut oil, and heat on the stove on a medium-low setting.
  5. Pour batter into pan and cover. Flip and let cook on the other side for 30 seconds.
  6. Add your favorite toppings, eat and enjoy!
