Low Fat and Low Carb Pizza

ingredients:

  • 1 head of cauliflower
  • 1 cup almond-based mozzarella cheese
  • 1 egg (vegan version: use 1 tbsp of ground flaxseed and 3 tbsp of water to replace 1 egg)
  • Siracha BBQ sauce, or the pizza sauce of your choosing
  • 2 tbsp of garlic
  • Tomatoes (to taste)
  • Spinach (to taste)
  • Dash of oregano
  • Dash of salt

How to Make LOW Fat and Carb Pizza

  1. Preheat oven to 400° and line the baking sheet with parchment paper.
  2. Cut the stem off the cauliflower. Remove the stem from the middle of the cauliflower.
  3. Put the remaining cauliflower in a food processor and pulse it until you have small bits remaining.
  4. Scrape out all the cauliflower bits from the food processor onto a clean towel. Gather the cauliflower into the middle of the towel and squeeze the excess water out.
  5. Pour the dried cauliflower into a bowl. Mince 2 tbsp of garlic and add to the same bowl. Proceed to add the cheese, the egg, oregano, and salt. Mix the ingredients thoroughly.
  6. On parchment paper, take the cauliflower dough and flatten it out into the shape of a pizza crust. Make sure it isn't too thick (about 1/2 inch thick).
  7. Place the parchment paper with the crust on it onto a baking sheet. Cook it in the oven for 20 - 40 minutes.
  8. Prep the tomatoes by cutting them into thin slices.
  9. Once the crust is done cooking, remove from oven and let cool.
  10. Spray the parchment paper with your choice of non-stick spray, and then flip the crust over.
  11. Begin adding your toppings. First, pour your choice of pizza sauce onto the crust and spread evenly with a spoon. Add cheese, spinach, and tomatoes. Feel free to add as much of each topping as you like.
  12. Raise oven to 450° and put the pizza on the bottom rack. Cook for roughly 15 minutes.
  13. Remove from oven, let cool, and enjoy!
