How To Make FIRE Vegan Lasagna


This recipe for lasagna is a great vegan alternative! It uses lentils and spinach so you'll get a ton of protein and nutrients.

  • 2 jars marinara sauce, 25oz each
  • 1 cup dried red lentils
  • 1 cup cashews
  • 16 oz firm tofu (patted dry with paper towels)
  • 1/2 cup nutritional yeast
  • 3 tbsp fresh lemon juice
  • 1 tsp salt
  • 1 tsp basil
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 2 - 3 cups baby spinach
  • 1 box lasagna noodle (whole grain or gluten-free if you prefer)


How To Make FIRE Vegan Lasagna

  1. Preheat oven to 350° and set up tofu to drain.
  2. In a medium pot, add 3 cups of water to lentils and bring to a boil. Once boiling, lower down to a simmer for 20 minutes.
  3. Add cashews to a blender and blend it a bit.
  4. Cut drained tofu into a few slices. Use paper towels to blot out more moisture from the tofu.
  5. Add tofu, salt, oregano, basil, nutritional yeast, garlic powder, and lemon juice to the blender with cashews. Blend all together until smooth.
  6. The lentils should be ready at this point. Drain them and place them back into the pot with the two jars of marinara sauce. Stir together.
  7. Pour 1 cup of the lentil sauce into a 5 X 8 brownie style pan.
  8. Top the lentil sauce with lasagna noodles. Then take half of the cheese mixture from the blender and put that over the lasagna noodles. Then add 1 1/2 cups spinach on top.
  9. Add another cup of lentil sauce on top of the spinach, then layer more lasagna noodles on top. Add the rest of the cheese mixture, top with spinach, and use the rest of the lentil sauce to cover the top. Use a lid or aluminum foil to cover the pan. Bake for 1 hour.
