Coconut Curry with Quinoa

  • 3 14 oz cans of light coconut milk
  • 1 cup white quinoa (rinsed in a fine-mesh strainer)
  • 1 cup vegetable broth
  • 1 tbsp coconut oil
  • 1 small onion, diced
  • 1/2 cup broccoli florets, diced
  • 1/2 cup carrots, diced
  • 1/3 cup snow peas, loosely cut
  • 1/4 cup tomato, diced
  • 4 garlic cloves, minced
  • 1 tbsp fresh grated ginger
  • 1 tbsp curry powder
  • Salt and black pepper, to taste
  • 1 pinch cayenne pepper (optional)
  • 1 tbsp agave nectar (optional)


How To Make Awesome Coconut Curry

  1. Put the quinoa in a strainer and rinse. Then put it in a pan and toast it for about 3 minutes. Add a cup of coconut milk and 1/2 cup of water.
  2. Prep the vegetables. Dice the onion, broccoli, carrots, and tomato. Mince the 4 garlic cloves and grate the ginger.
  3. Combine the garlic cloves, onion, carrots, broccoli, ginger, and vegetable broth in a large pot.
  4. Add 2 cans of coconut milk, curry powder, cayenne pepper, black pepper, tomato, and snow peas to the large pot. Stir together.
  5. Plate the quinoa and then cover in the vegetable curry mixture.
