Gluten-Free Spiced Ginger Cookies

 This recipe is ginger-spiced and everything nice! Now that fall is here and the holidays are quickly approaching, there’s never been a more perfect time to make yourself a batch of some freshly goodies. 

 

These cookies are the perfect balance of ginger and fall spices that give it a nice kick and depth in flavor. Try out these gluten-free spiced ginger cookies that are warm to the soul and will make you feel like it’s the holidays no matter the time of year. 

Why Go Gluten-Free (GF)?

 

Going gluten-free is a diet change that has gained popularity in recent years. However, to those that may be asking what exactly is gluten, it is actually a protein that can be found in many grains including rye, barley, wheat, malt, and other grain derivatives.

 

Those with celiac disease need to maintain a gluten-free diet in order to prevent the inflammatory, immune reactions that come with ingesting gluten. Recent studies have shown that a low-gluten or gluten-free diet could possibly be helpful even for those without celiac disease or gluten allergies! This diet could reduce bloating and promote modest weight loss and digestive health. 

 

How to Make GF Spiced Ginger Cookies

 

This recipe is really quite simple - both in terms of prep work and the amount of ingredients! 

  • Ensure that you’re getting gluten-free oats and baking powder. Although these are naturally gluten-free, these ingredients can often be cross-contaminated with products that do contain it. 
  • Making your own oat flour is really as simple as blending oats in a processor until fine! Now you have the base to mix with the rest of the dry ingredients.
  • Prepare your wet ingredients in another large bowl and then combine together.
  • After the dough is formed, form them into balls and make sure that you flatten them on the sheet - these cookies won’t spread out very much naturally.
  • Bake, cool, and enjoy! 

Store them in an airtight container to keep for a few extra days!

How to cook Vegan Gluten-Free Spiced Ginger Cookies

  1. Preheat oven to 375° F and prep baking sheet with liner or baking mat.
  2. Place the oats into the food processor and blend into a powder, then mix them with the ground almonds, spices, baking powder, and salt.
  3. In a large bowl whisk together the coconut oil, maple syrup, and almond milk then pour this into the flour mixture, stirring well until it forms a stiff dough.
  4. Take a tablespoon of mixture and roll into a ball. Place cookies on the lined baking sheet and flatten with the palm of your hand. Repeat until all the mixture has been used.
  5. Bake for 14-17mins until the cookies are firm to touch and golden, and leave to cool on the tray until cool enough to eat.
